Pre heat the oven at 225 C
In a food processor, blitz apples + cinnamon + vanilla pod/ vanilla essence for few seconds until apples turn into small chunks. Take it out in a bowl.
Now again in food processor, add oatmeal, blitz it for few seconds. We are looking at the consistency as some powder and some chunks of oatmeal. After this add in a same bowl of apples.
Now again in food processor, add walnuts + almonds , blitz for few seconds , so that we get chunks of both together. Add it in the same bowl of apples and oatmeal.
Add cranberries , chia seeds and honey. Mix well.
Take a baking tray, lay the baking sheet on it , now add the mixture in it, level it well , press it with spatula or back of any clean mason jar.
Bake it for 25- 35 minutes, check after 25 minutes and if not done, let it bake for another 10 minutes. Let it cool down and slice it in any shape you like. I had sliced diagonally and in the middle.
If you like you can add 1/2 cup of honey to it. According to me sweetness was perfect but at times people prefer more sweetness.
Otherwise top it up with some melted dark chocolate
