Turmeric Beetroot Salad

  • 1 Grated beetroot
  • 1 Tablespoon vinegar
  • 8 Leaves basil - chopped
  • 6 Leaves mint - chopped
  • 1 Can chickpeas - drained
  • Squeeze of green lime
  • Salt per taste
  • 1 Tablespoon toasted pumpkin seeds - toast on a pan for few seconds, don't burn it

Turmeric dressing

  • 1 Tablespoon turmeric
  • salt & pepper seasoning per taste
  • 1/2 Tablespoon organic coconut oil
  • Pinch red chilli powder
  • Dollop honey
  • 1/2 Cup yogurt


Pickle beetroot and leave for 12 minutes, read below

  1. Take a bowl, add vinegar + squeeze of green lime + salt + black pepper , mix it well and mix grated beetroot in it and leave it for 12 minutes to pickle it.

Turmeric dressing - micro for 1 minute

  1. Take a bowl, add turmeric + salt + pepper + organic coconut oil and microwave it for 1 minute

    After that add pinch of red chilli powder , honey , yogurt and mix it well and keep it aside.

Assemble the salad

  1. Take a bowl or a mason jar - 

    Mason jar, layer it - Add pickled beetroot, basil + mint leaves ,add chick peas ,toasted pumpkin seeds, add turmeric dressing. 

    If serving in a bowl , mix all the ingredients and serve , or just add the ingredients and add the turmeric dressing on the top and serve

Recipe Notes

You could also add a dollop of yogurt on the top of the dressing before serving.
