Autumn can also be a time when one could really sit in the garden and enjoy the meal of the day – really?After the cold and windy days, the sun decided to give us sunshine. Today was just perfect; one could stay in the garden and enjoy the sun. The warmth of the sun which one could typically enjoy when the weather is cold but there is clear blue sky.This afternoon decided to make this colorful vegetarian delight which was indeed a treat for the eyes.The taste was so refreshing.I choose my favorite bread – “Rye bread which is known as Rugbrød in Denmark”. Every house here in DK has rye bread; it’s super healthy and high in fiber, this is used for lunch pack for the kids, snack, for sandwiches etc. Something Denmark can’t live without and of course tastes very different, considered as staple food. There is a huge range of variety for rye bread that one can choose in the supermarket.This gorgeous vegetarian delight sandwich is super quick to make and very delicious. It’s a very simple recipe, which I had created while looking for the ingredients in the refrigerator. This would definitely remind you of summer..Here follows the recipe:-

  • Ingredients
  • 2 slices of Rye bread or your choice of your bread
  • Cream spread your choice
  • 3-4 salad leaves
  • ¼ Cucumber - Sliced
  • 1-2 Salad tomato or any tomato will do – Sliced
  • ½ Avocado – peeled and sliced
  • 3 Dollops -Greek Yogurt - straight from the refrigerator
  • 1-2 drops of lemon
  • Handful- Chives
  • Salt and black pepper for seasoning – as per taste
  • Dressing –
  • Mix yogurt lemon, chives, salt and pepper.
  1. Spread the bread slices, put salad leaves, cucumber, avocado, tomato, 1 dollop of yogurt dressing, salt and pepper
  2. Put another slice on the top, Cut the sandwich in the middle.
  3. Remaining yogurt – served it as dressing on the side.
  4. Ready to be served.
