Turmeric and my kitchen – Turmeric Beetroot salad

Turmeric is one of the yellow spice Indian kitchen can’t live without and my spice box is incomplete without it. It’s one of my favourite spice that I use on daily basis in my food, it gives a beautiful yellow hue to the food, was raised consuming turmeric in food every day, that’s very normal in India, in the end understanding is it’s the normal yellow spice use basically to prepare Indian food. Wanted to create a new salad recipe with my favourite spice thus created delicious “turmeric beetroot salad”

Recently turmeric has got lot of attention throughout the world and has been in the news due to its health benefits. Happen to be a part of the conversation some time ago which was basically about turmeric, someone needed a desperate help to understand what turmeric is and how can it benefit, if it is eaten every day, this person was totally new to turmeric and suffering from a disease which is difficult to cure but learnt that turmeric can help if it is consumed every day.

Turmeric Vegetarian Beetroot Salad

Do you know turmeric was first originated in India? 

Turmeric is one of the oldest spice used in India and known as Indian saffron. Originally it was used as a colour dye for fabric , later it was used as spice for food and to make medicines. Turmeric has a long history in India and it has been used in Ayurveda (knowledge of life), it’s one of the world’s oldest medical system originated in India. Turmeric is widely used in India for face mask, during wedding rituals, in temples, for food, for medicines, to dye a cloth – fabric industry and more.

Colour and taste

Turmeric has a very intense beautiful yellow colour and it can easily leave stains on the hands and clothes.

Taste is little bitter if consumed too much. Otherwise it’s ok.

Turmeric Beetroot Salad

Why salad?

Since it has so many health benefits, people are not afraid to use it even though they don’t prepare Indian food. For me food has always been very fascinating and creative way to express emotions. As I have mentioned above turmeric is one of my favourite spice and I wasn’t afraid to use it for my salad. It’s quite interesting to prepare salad with turmeric and give a nice twist to basic day to day food ingredients. All the ingredients are easily available, not a complex recipe at all.

This salad can be portable in a mason jar, perfect for brunching , light lunch or picnic.

Ingredients
  • 1 Grated beetroot
  • 1 Tablespoon vinegar
  • 8 Leaves basil - chopped
  • 6 Leaves mint - chopped
  • 1 Can chickpeas - drained
  • Squeeze of green lime
  • Salt per taste
  • 1 Tablespoon toasted pumpkin seeds - toast on a pan for few seconds, don't burn it
Turmeric dressing
  • 1 Tablespoon turmeric
  • salt & pepper seasoning per taste
  • 1/2 Tablespoon organic coconut oil
  • Pinch red chilli powder
  • Dollop honey
  • 1/2 Cup yogurt
Instructions
Pickle beetroot and leave for 12 minutes, read below
  1. Take a bowl, add vinegar + squeeze of green lime + salt + black pepper , mix it well and mix grated beetroot in it and leave it for 12 minutes to pickle it.

Turmeric dressing - micro for 1 minute
  1. Take a bowl, add turmeric + salt + pepper + organic coconut oil and microwave it for 1 minute

    After that add pinch of red chilli powder , honey , yogurt and mix it well and keep it aside.

Assemble the salad
  1. Take a bowl or a mason jar - 

    Mason jar, layer it - Add pickled beetroot, basil + mint leaves ,add chick peas ,toasted pumpkin seeds, add turmeric dressing. 

    If serving in a bowl , mix all the ingredients and serve , or just add the ingredients and add the turmeric dressing on the top and serve

Recipe Notes

You could also add a dollop of yogurt on the top of the dressing before serving.
