Here comes the main dish with pesto sauce :-

Yesterday I had posted the recipe how to make homemade Parsley Walnut Pesto, today actually I had started using the homemade pesto in my recipe. Itโ€™s pretty interesting to see that being a vegetarian could bring lots of options on the dining table and this somewhat inspires me to prepare healthy food for the family.

This recipe which I am sharing was created by me on the spot with handful of ingredients in my hands. I love the magic at times that these hands and creative brain could prepare. This makes me believe that am on the right path. I have always been like this. Spoke to my one of my old friend today over the phone, she reminded me of our old days like a decade ago where I had prepared something for her and she loved the food and that was the creation of my experiment and ended up being a hit recipe. It is just a co-incidence that am mentioning about it on my food blog.

As I mentioned this yesterday in the post – Parsley Walnut Pesto that my boy..skylander boy is becoming a big fan of pesto. He would prefer pesto spaghetti all the time.

I chose edamame beans for the recipe, itโ€™s kind of staple and regular ingredient I have in the house. It is packed with minerals, vitamin and high in protein. Edamame beans are soybeans and a super healthy ingredient for a vegetarian. If ones like soy so it could be an abundant ingredient for the recipe. My pesto spaghetti is a very easy and a quick fix for the dinner/lunch/potluck parties. If you have the pesto ready then itโ€™s a quick go..

  • 400 gm fresh spaghetti / Market bought spaghetti in packet
  • 1/3 cup - Edamame beans [ frozen defrosted]
  • Handful โ€“ Sliced salad cherry tomatoes
  • 2 cups - homemade walnut parsley pesto โ€“ any other pesto will do
  • Good quality Parmesan cheese โ€“ per taste
  • Salt per taste
  • 1 tablespoon- Good quality Olive oil
  1. Boil the spaghetti per the instructions of the packet.
  2. Pour olive oil in a pan, add sliced cherry tomatoes, edamame beans, cook it for 2-3 minutes, add pesto, salt and stir it for couple of seconds and add the boiled spaghetti, mix it and serve hot.
  3. Top it up with cheese, olives.
