Rice is a part of day to day meal planning and if any new recipe could replace the plain rice then it works as a cheery on the cake. It’s easy and quick to make.


Paneer rice with raita

Half of the population on our beautiful planet treats rice as their staple food. Pulling a piece of my childhood memory, I used to love to eat rice and still do. My mom being the best cook, she cooked rice with different variation and that always turned out so good and delicious that one could actually remember the taste of the rice later.


The weather in Denmark is hot these days and that definitely calls for light lunch along with some yogurt and fruit drinks. During the weekend Somehow I felt like creating a new recipe of rice which had to be light and quick to make.  I knew exactly the taste I was craving for and pulled all the ingredients out and created this new recipe. This is the fun part of having a food blog, it gives so much of joy to share my own recipes with the world and learn about their experiences.


Since the weather is amazingly hot and while taking the pictures in our garden, I felt like just lay down on the grass and soak in the sun. I actually did that while taking the pictures.. Held the camera in my hand and laid down on the grass and closed eyes, so calming and relaxing 😉 Perhaps couldn’t have enjoyed the moment that long and had to come back in the reality and eat the lunch 😉


This recipe goes well with curry as well…curry and rice..yum!! I have served  rice with raita ( yogurt mixture) which is made of some chopped tomatoes, onions, salt and pepper.

Roasted Paneer Rice with yogurt ( Raita)

  • 1 ½ cup basmati rice - already made ready and kept aside
  • 150 gm - Paneer cottage cheese
  • 1 Red big onion - chopped
  • Ginger Sliced
  • 1 tablespoon -Oil
  • ½ teaspoon - jeera cumin seeds
  • cup - peas - defrosted if fresh boiled
  • 1 Tablespoon - Coriander Powder
  • 1 Tablespoon - Roasted cumin powder
  • Salt - per taste
  • ½ Kasturi methi Fenugreek Leaves
  1. Start with preparing plain basmati rice and keep it aside when it's cooked.
  2. Heat oil in a pan, roast the paneer on both the sides and keep it aside on a kitchen towel.
  3. Now add cumin seeds in the same pan,wait for few seconds ,add onions ,sliced ginger ,let onions get caramelized for few seconds,add peas ,and all the spices( no kasturi methi now) mentioned above along with salt. Stir it, let it get cooked for 2 minutes. Now add few drops of water, cover it for 2 minutes, stir it, cover it for another 2 minutes.
  4. Add Kasturi methi, roasted paneer and cover for 2 minutes again.
  5. Mix the pre-prepared rice in this mixture.
  6. Serve it hot
