It becomes very essential for a vegetarian to choose the ingredients carefully for the meal planning. Healthy lifestyle and good eating habits shouldn’t be ignored. Spinach is packed with tons of Vitamins, folic acid and especially rich in iron. I like to eat spinach ofcourse due to health benefits and it tastes good as well.. Am sure most of you like it too.. right?Palak Paneer {spinach with cottage cheese} is a regular vegetable in India and I like to cook it too. This time I was craving for some more texture in the spinach and then decided to add peas. Why not? It was a good attempt and tasted good.

It’s a very simple recipe as the picture states it too – very simple. Now the picture reminds me of Dhabha’s in India. Dhabha’s are well known for good food served on the highway under small huts. The dhabha word is actually getting very popular in cosmopolitan cities too and restaurants are also named as Dhabhas now.

I have served the spinach vegetable with roti’s. It can be served with any type of Indian bread or may be could be eaten with a sandwich bread.

Palak - Matar Paneer !! Spinach - Peas with cottage cheese

Ingredients
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds – Sarsoo in hindi
  • 2 small bay leaf – Tej pata in hindi
  • 1 Finely chopped garlic
  • 2 Medium sized onions - chopped
  • 2 Medium sized tomatoes – chopped
  • 1 teaspoon fenugreek leaves – Kasturi methi in hindi
  • 2 Cups – Frozen defrosted peas { if fresh then also ok }
  • 700 gm Frozen Spinach { if fresh then also ok }
  • Pinch of Turmeric – optional
  • Butter - approx 1 tablespoon it doesn't have to the exactly the same quantity but don't pout more
  • Salt per taste
  • Pinch of Garam Masala
  • 4-5 Tablespoon – Fresh cream { after 4 spoons see if required then add 1 more }
  • 200 gm - Frozen defrosted paneer { if fresh then also ok}
Instructions
  1. Keep your spinach and peas defrosted. If using fresh spinach and peas so that would work too.
  2. Start with adding oil in a pan. Now add mustard seeds, after it starts splattering then add bay leaf, onion.
  3. Let the onions caramelized, add tomatoes, salt, turmeric powder, fenugreek leaves. When the oil starts separating then adds spinach and peas. Let it get cooked for 10 – 15 minutes. Spinach will turn into darker colour.
  4. Now use a food processor or a blender and make it into some paste. Put it back on the stove and cook for another 5 minutes after adding paneer { cottage cheese} Add salt if it requires. Add butter ,pinch of garam masala and cream. Mix it well and in the end add 1- 2 drops of lemon juice.
  5. Serve it hot with your favorite bread 

Remove bay leaves before putting the spinach mixture in the blender.
