I resonate a lot emotionally with banana bread/banana cake/ banana muffins as it has so many beautiful memories attached with one of my close friend. Have spent hours sitting in one of the famous bakery/cafe called Emmerys (organic) in Copenhagen. My friend used to work at Emmerys and they have the most delicious banana muffin in Copenhagen. I used to grab a cup of coffee, banana muffin and used to read a book or write something by the window facing the street & watch my friend working. This café is still there and it is in the center of Copenhagen but my friend has moved to the USA, miss her, however still in touch with her, remembered her while making my Moist Avocado Banana Bread. I dedicate this post to her 🙂
Avocado addiction is still on
Knowingly avocado is super healthy and packed with potassium, vitamins especially vitamin E and K, it is high in fat, which is unsaturated fat and also known as good fat. My addiction to avocado means it can be easily found in my kitchen, I like to use it for my salad, toast, smoothies, after work out meal, my kids loves to snack on it, also like to create new recipes with avocado and it’s a perfect alternative for butter. It’s a super healthy snack and the texture of avocado is little mushy but it’s worth it. I fell in love with avocado through guacamole many years ago and the gorgeous green colour is totally divine. Created a new recipe which was again very spontaneous. The same recipe can be used for banana cake, change the shape and size of the baking tray. Great thing about this recipe is food processor does the whole mixing part. I always associate banana cake with coffee. It fits so well with breakfast , brunch or evening coffee or tea.
- 2 Cup rolled oats
- 1 Cup all purpose flour
- 1 Avocado
- 3 Rip bananas - pieces break the banana , not chopped, not mashed
- 2 Eggs - Used organic
- 1 Cup sugar
- 1/2 Teaspoon salt
- 1 Teaspoon Baking soda
- 25 Grams white chocolate - chopped
- 50 Grams raisins
- 50 Grams Walnuts
Pre heat the oven at 225 C.
Start with making oats flour - add rolled oats in a food processor , blend it for 2-3 minutes until it becomes into powder form, no grains.
Add all purpose flour , blitz again for few seconds and now add avocado + pieces of bananas + sugar + eggs + salt + baking soda. Blitz it for 1 minute until all the ingredients are mixed together.
Take the baking sheet and line it on a baking tray, I take little amount of the batter that I am baking and put it under the baking sheet to stick the baking sheet on the baking tray. (for example 4 sides of the baking tray)
Pour the batter on the lined baking sheet in a baking tray. Spread the batter evenly.
Add white chocolate + raisins + walnuts ( no need to chop ).
Bake it for 30 - 35 minutes. Check after 30 minutes (insert a fork and see, if the batter sticks to the fork so it is not baked, if the fork comes out dry or little moist then take it out, it will look light green in colour when the batter is rising up and will change the colour to brown when it starts baking at the top.
Take it out from the baking tray and let it cool down.
