Almond milk tastes so delicious and yet so healthy!
I have been a huge fan of almond milk and have been making homemade almond milk for quite many years now. Preferably use it in my recipes , smoothies or just drink a healthy glass of almond milk. Vegetarian calls for a healthy choice..nothing is better than homemade almond milk..
Usually the food habits are the impression of the childhood and almonds have always been treated like quite energy boost snack at my mom’s place. Back in my childhood days my mom used to soak the almonds and used to peel them the next day and give it to us before we could leave for the school bus. I am so blessed to have 2 gorgeous caring women in my life, 1st is my beautiful mom and 2nd is my lovely mother in law who is no less than a mother to me & I love her. Whenever we visit my mother-in-law, she would also soak the almonds overnight , peel them the next day and share it with us. Love it when she says remember to eat them. Kids think it’s a treat when she’s peeling the almonds and kids keep going back to her until her bowl is finished with all the soaked almonds.
Homemade almond milk doesn’t last too long in the refrigerator, not more than 2-3 days. When it goes bad, it separates, changes the colour and smells really bad. I have experienced this once when I had made almond milk for the 1st time, happened to forgot that I had made it. Like they say one keeps learning every day and I have been learning from my experiences and since then am more careful with almond milk. It’s about an effort one makes and uses the energy to produce the food. The process starts with soaking the almonds overnight and peeling them the next day. After putting in so much of effort, one can never like that the food goes bad.
When am in a hurry or have a quick craving to make a recipe then I just buy it from the market and luckily it’s available in organic version from where I buy my almond milk. Homemade food is always healthy and it also goes for almond milk as well , it has more taste of almonds, no preservatives, so simple and rich in taste and serves the healthy purpose too.
Here follows the recipe –
- 750 gm – almonds not the thin and long one, they tend to be bitter
- 1 liter fresh water
- Required items to make almond milk
- 1 big muslin cloth
- 1 sieve
- 1 big deep bowl
Soak the almonds overnight, cover the almonds with water.
Next day peel them, and grind them in small batches with some water. Keep repeating the process with 1 liter of water and soaked almonds. Keep blending it until the almonds are mixed well with water. It should look very milky and almonds should totally mix well (like a paste is mixed well in water)
Now start sieving it – put the muslin cloth on the sieve and put a big deep bowl underneath the sieve.
Mix it with a spoon/fork and pour it in a jar or a bottle. Refrigerate it and drink cold or use it in the recipes.
Remaining pulp of the almonds could be churned again in the blender with some more water. That will produce some more almond milk.
Pulp could be toasted in the oven until the moisture goes away and later (sometime quick) use it in other baking recipes. I have done that.
Don’t store the almond pulp just like that, it will have fungus on it very soon and totally a waste.
