Pizza Pizza Pizza…everyone loves pizza. I love it too..
When we think about pizza, it’s easy and quick to make. After having a long day at work, wanted to cook something quick and kids wanted to eat pizza for the dinner. I was hungry too; however I didn’t want to prepare a regular vegetarian pizza. My creative brain was screaming to create something new and not a regular pizza. Had done the grocery shopping yesterday and I knew exactly what was there in the refrigerator. Aubergine could be easily found in my refrigerator, that I typically buy and use it whenever I feel like using it in my recipes. It’s super healthy, packed with vitamins and minerals – that’s another healthy excuse to buy 😉Due to lack of time and since its Friday, I didn’t want to spend long time in the kitchen by preparing the pizza dough from the scratch. This time I had decided to prepare the pizza with a market bought full corn pizza base and prepared the topping from the scratch. I would definitely post in coming months how to make pizza base/dough from the scratch..This is pretty interesting sometimes one knows how the recipe/ food will taste like. I was craving for that particular taste and end up cooking an awesome topping for the pizza. Pretty unusual but worth investing that limited time in the kitchen.After the pizza was baked, the infused flavor of garlic and herbs on aubergine and squash just made the dinner hit on the dinner table.. instant hit!! The luscious green color and griddled dark looking aubergine was just perfect. DiVinE!!
- 1 pizza base
- 1 Big aubergine – cut in round shape
- 1 Big squash - julienne
- Tomato sauce or chopped can tomatoes
- 200 gms mozzarella cheese
- 2 fresh cloves – garlic
- 1 teaspoon dry basil
- 1 teaspoon dry oregano
- 1 tablespoon fresh water
- ½ teaspoon salt
- Some Olive oil
Put the oven on 250 degree C to start with.
Now cut squash and keep it aside
Smash the garlic afterwards add oregano and dry basil and smash them together, add salt. Now add water and mix it.
Cut the aubergine and rub the garlic mixer of dry herbs on it and let it marinate for 15 minutes. After that take a griddle and put oil and grill the aubergine for only 5 minutes. When it starts becoming tender and white color starts disappearing. Remove them and keep it aside. In the meantime, on the raw pizza base, spread the tomato sauce, put mozzarella cheese, spread squash and lay the griddled aubergine pieces on it.
Put it in the oven for 25-35 minutes depending on the oven.
