Chocolate Truffle Mango Ice Cream Cake

 

Happy Mother’s Day!!

I dedicate this special Mother’s day cake to my gorgeous mother and lovely mother-in-law. I have been blessed to have these 2 women in my life 🙂

This truffle Mango cake is a special recipe which I have created from the scratch to celebrate Mother’s Day.

Mother’s role is a very special role in any individual life and irreplaceable. It’s a very profound relationship one shares with their mother. She’s the one who takes the pain to bring a new soul in the world and always stays by side no matter what. I am a mother too and have tremendous respect for women.

Being mother is not an easy job, it’s messy, lot of emotions, hard work , sleepless nights sometimes but it’s totally worth it and I love my job being as a mommy. Love those cute little hands when I receive hugs from them, unconditional love, those cute admiral eyes which has all the expectations that my mommy knows the magic to solve my problem.

This ice cream cake is full of sweetness and love. It has different layers such as raw truffle, dark chocolate, rhubarb marmalade, mango and mango ice cream on top. Recipe for Rhubarb marmalade.

Homemade Rhubarb Marmalade

 Below in recipe, will write the whole process to make all mentioned layers. It’s quite easy to make.

When I decided to make this recipe, bought all the ingredients except date fruits, it’s a basic dry fruit which I always have in the house as my kids loves to munch on it. I was sure that I have it until I begun to make the recipe. Fortunately had the whole family home due to the long weekend and unfortunately all the supermarkets were closed which means it was nice to have a long weekend due to public holiday but not nice to miss the ingredient when the supermarkets were closed 😉

We drove almost 15 KM away to find dates 😉 what really..oh yeah..where as supermarkets are 5 minutes away where I live, well that’s a blogger life , a desperation to find an ingredient 😉

My skylander boy accompanied me in the kitchen as he was super excited with the sound of mango and ice cream. He kept asking me who taught you to make delicious food, am so lucky that you are my mother. See it’s a well-deserved compliment for a mommy while making a Mother’s day cake ..hehe..

Truffle cook time - 10 minutes in total

Dark Chocolate - 10 minutes in total

Mango Ice Cream Cake - 7 minutes cooking time but resting time is over night in the freezer

Ingredients
To make Raw Truffle
  • 150 gm dates organic
  • 100 gm raisins
  • 100 gm walnuts
  • 1 tablespoon coconut oil
  • 1 tablespoon cocoa powder
  • a pinch of salt
Mango Ice cream
  • 1 cup full fat milk
  • ½ cup cup condensed milk
  • 1 ½ cup mango puree (1 big mango, blend to make puree)
  • dollop of honey ( optional – if required more sweetness)
  • 1 vanilla pod
Chocolate
  • 200 gm dark chocolate
Mango and Rhubarb Marmalade
  • 1/2 mango chopped
  • 50 gm rhubarb marmalade
Instructions
Mango Ice-cream
  1. Mix all the ingredients, bring it to boil, keep stirring continousously it for 7 minutes and keep it aside to cool down. My suggestion will be make few hours before and keep in the refrigerator. Take it out of the refrigerator when the base of truffle is ready.

Truffle base
  1. Blend all the ingredients for truffle in a food processor and keep it aside.

  2. Take the desired baking cake tray , take the truffle mixture and spread it to make the base , press gently.

Chocolate
  1. Melt the chocolate - put a pot with some water and let it boil, now put another small pot and add chocolate to melt , stir it. 

    Now add on the truffle mixture base

Mango and Rhubarb Marmelade
  1. Spread rhubarb marmelade and chopped mangoes

Mango Ice- cream
  1. Pour the ready mixture of mango ice- cream and now freeze it for over night.

    Serve it next day, with your favourite topping of fruits , for example - mango

If using market bought mango puree then no honey required
