Being a breakfast person, the door of creativity is open for me to create new breakfast recipes. You may have noticed I have quite many breakfast recipes. Why not? It’s one of the most important meal of the day and sets the tone for the whole day.
Oats are super healthy and quick to make, it takes few extra minutes to add a little twist to my breakfast and pamper myself with amazing healthy treat. Wouldn’t you like to give a healthy treat to yourself too? Bircher muesli can be made for breakfast or brunch. I always use organic oats, you may use whatever you like.
Love for Bircher muesli
My love for bircher muesli started a long time ago during our family holiday and since then I always look forward for bircher muesli in the breakfast buffet while being on holiday. It’s truly a treat for me on the breakfast table, spark in my eyes and smile on my face 🙂
The inspiration for Instant Bircher Muesli came from my kids. Usually for bircher muesli, one must soak the ingredients overnight to make it soggy and to create some texture. Noticed my kids mixing oats, yogurt, water, juice etc. on the breakfast table. They usually prefer their muesli with flavoured yogurt and one day mommy noticed some left-over muesli in their bowl. There started my creative brain developing the recipe.
Have also used chia seeds which are usually soaked overnight, however this time I wanted to give it a break and create a quick recipe. I had blended chia seeds with some milk for 2 minutes (quantity below in recipe), this method was successful to make chia seeds into gel form and it was just perfect. Chocolate doesn’t need any occasion, as I always say it makes the occasion itself very special. Since I was in the middle of creating the recipe, was craving for some sweetness, some chocolaty taste therefore ended up creating the recipe as Chocolate Instant Bircher Muesli.
- 1 1/2 Cup greek yogurt
- Dollop of honey or maple syrup
- 1 Teaspoon vanilla essence
- 1 Cup rolled oats Organic
- 1 Cup milk
- 1 Tablespoon chia seeds
- Handful Toasted almonds & chopped
- Fresh raspberries or your favourite fruit
- 1/2 Cup orange juice
- 1 Tablespoon heaped cocoa powder
- Some dak chocolate chips / dark chopped chocolate
Blend chia seeds and milk together for 2 minutes continuosly. Keep it aside.
Toast almonds in a pan, chop it , keep it aside
Take a bowl + greek yogurt + rolled oats +honey or maple syrup + vanilla essence + mix well and now add chia seeds mixture + cocoa powder + orange juice. Mix all well and keep it in the refrigerator for 8-10 minutes to set. Serve it with raspberries , chopped toasted almonds + dark chocolate on top
You can add 1 teaspoon more cocoa if you really want more chocolaty flavour.
