Love for Mango

Mango has always been my favourite fruit. Have so many wonderful memories of my childhood with this fruit.

Here in Copenhagen, we have mango throughout the year, however it doesn’t taste the same like the mangoes from India. Copenhagen imports most of the vegetables and fruits from several countries. The taste of these imported mangoes gets better around April to July as this is the peak season of mangoes and there is also a noticeable difference in the size and colour of Mangoes.


Cardamom Summer Mango Drink

Cardamom Summer Mango Drink is a perfect drink to beat the heat. It can be made as a welcome drink for a party, kitty parties or just to give a mango treat for the kids 🙂

This tropical fruit is gloriously beautiful and has succulent texture. The juiciness of mango has so much of flavour and sweetness.

There are also health benefits of it.

Cardamom Summer Mango Drink

Craving for Mango –

As the season has bloomed for Mangoes, I was literally craving to eat mango and make recipes with it. To create this recipe, I had used coconut cooking milk but not the regular drinking coconut milk. It’s the same coconut cooking milk which we use to make Thai recipes or for cooking. It has texture and thickness which will boost the mango summer drink. I had kept the coconut cooking milk in the freezer for 1 hour. This will help with the texture and no ice cube is required. (It can also be kept for 2-3 hours in the freezer if feeding more than 2 people. Increase the quantity of the ingredients if making for more than 2 people). Below is the recipe for 1-2 people and enjoy the delicious summer mango drink 🙂

  • 1/2 Cup coconut cooking milk - kept 1 hour in the freezer – Read above
  • 1 Cup chopped fresh mango Pulse the mango and make puree
  • Dollop of honey
  • 2 Tablespoons rose water
  • 1 Teaspoon cardamom powder
  • 2-3 Strands of Saffron ( Kesar in Hindi)
  • Dry yellow- red rose petals
  • 2-3 Cardamom pods
  1. Blend rose petals and cardamom pods together, put it aside for garnishing on top of Mango drink.

    Now in the blender – add the chilled coconut cooking milk + mango pulp + rose water + cardamom powder + saffron strands.

    Now pulse it & taste the sweetness, add more honey if required. Pour in your favourite glass

    Garnish it with rose powder mixture.
