Besan Chela or Indian savoury pancake
Besan means powder/flour made of chickpeas which is the main ingredient and in India besan is called as “ Gram Flour ”. Besan Chilla/ Besan Cheela/ Besan Chela/Besan ka Chilla /Puda are referring to only one dish which we are talking about right now. I call it as Indian savoury pancakes without eggs and it is from the famous state called Rajasthan in India.

It could be made as a snack , brunch or mainly for breakfast. My mom has always been making this for the breakfast and whenever I visit her as she knows how much I like to eat it 😉
It’s a super healthy snack, very light, a good source of protein. I have made this several times for dinner parties, also served it as a quick snack and ate it as a warm breakfast too. Have always received good feedback about Besan ka Cheela or Puda from my guests. At my home I call it as Besan ka Puda.
I may sound very foodie, but that is true. I love food and have always been fond of it. Traditionally it is made very simple, have given it a twist and taste so good with the corriander chutney on the top, add some baby spinach, cucumber, tomatoes or any favourite vegetables on the top , make it into a roll and serve it. Irrespective of the shape, it doesn’t have to be perfect in shape -i.e.- round.
Make it round, make it into a roll, cut into triangular shape, it can be served any which way.
One shouldn’t forget, batter is semi-liquid , don’t add too much of water. Use any round shape pan to have a perfect shape.
I have served it with coriander chutney and this reminds me of the simplest way to make coriander chutney by my mother-in-law. She buys loads of fresh coriander and make fresh coriander chutney. Her chutney always tastes so fresh and yummy. Whenever I make chutney in my kitchen, always remember her while making it, isn’t amazing certain food can actually remind of your loved ones/people. - 2 cups Besan (gram flour/ chickpea flour)
- 350 - 400 Ml fresh water
- 4 chopped red onions
- Handful of fresh coriander leaves
- 2-3 green chillies
- Pinch of Turmeric - optional
- Salt, black pepper, seasoning per taste
- Some cooking oil / olive oil
- Handful of baby spinach or salad leaves
- 1 Chopped cucumber
- 1 Chopped tomato
- 1 Chopped red /yellow pepper
- Coriander chutney/ Ketchup
Mix all the ingredients and seasoning. The batter shouldn't be too thick, too watery
Drizzle few drops of oil cooking oil on a heavy bottom pan, pour some batter on the pan, when start having bubbles , dry batter, flip it to the other side, repeat the process, when it turns crispy and cooked, serve it hot.
To make it into a roll - add some chutney of your choice, coriander chutney is preferable , cucumber ,tomato ,red and yellow pepper, little bit of salt as seasoning. Roll it and serve it.
